Maybe you have already registered that a gala evening is coming and the Food Blog Year Awards announced this year, and this is really going to be an amazing party no matter what the awards are. Every year, the Food Blog of the Year lists an extra competition on different themes, and this year I was so excited that even though this month is crazy for me (for whom I do not?), I went to recipe yesterday.
The main partner of this event is AEG and Mama Shelter Hotel, therefore it is #aegmamadish.
FBR hosts this newly opened Mama Shelter hotel, which is based on a meal-sharing concept like a mother, so the subject was clear. Create a traditional Czech meal, like a mummy, but with a modern twist. Something that would fit into the restaurant of this cool hotel. Something that can be served on one common plate for more people. Something you would cook for friends with strangers, but in a modern way. And guess what? The last possible day to join the competition is today! : D

I could not decide whether to make stuffed peppers or cabbage rolls. And because they have a lot in common, so I did both, which is ideal for a common plate. In addition, guests can taste more things. So this is a modern twist of these two dishes. In general, the flavor of the main ingredients is lightly tuned to Asia and these rolls / peppers are served with avocados (because they do not like it), fresh coriander, Padrone grilled peppers, tomato sauce, dip and small coriander dumplings, complete and newcomers could taste bread dumplings. Recipe for dumplings is different but great! It's a pretty simple but fun recipe for my grandmother. It also contains instructions on how to create small balls simply without having a lot of work or breaking down during the boil.

I deliberately prepared small rolls and stuffed into the mini peppers Padrone, because then it is the right finger food. At home, you can prepare rolls of normal size, even though I have done so homeless yesterday at home so it's a good idea to have these scraping plates and small bits on the table. (For mothers before they start asking :-) The kids all tasted. cabbage rolls led.)
If you look at the process, in a few moments, it breaks into A and B. That's because I have a steam oven and this meal is greatly prepared for her. Vegetables are still colorful and full of vitamins. But do not worry, option B describes the traditional procedure on the stove or in a regular oven.

PS: They were terribly good and I recommend at least cabbage rolls or paprika to do. You can also make meat filling with chicken. :-)

Prepare the meat mixture by mixing ground meat, chopped cilantro, sage, garlic, ginger, or chili peppers. (Garnish, garlic and shallots can be mixed with a blender or immersion blender.) Season and season to taste.

Prepare the peppers by cutting off the stem and pulling out the semicircle. Fill them half of the meat mixture. Dismantle the top leaves of the cabbage and wash them.
A. If you have a steam oven, turn it on the steam program at 96 ° C. Place the cabbage leaves on the grid or perforated gastropods for several minutes (about 5).
B. If you do not own the steam oven, put the leaves in boiling salted water for a few minutes.
Spread the blasted leaves in a cold or ice water bowl. Fill the leaves with the meat mixture. (Drop the main stiffer rib of the leaf, place the roll in the center of the leaf so that the main rib crosses the roller, fold the leaves sideways and now roll the whole roll.

Prepare the dough dumplings dough. Cut pastry into smaller cubes. (If it is fresh, let it dry a little.) Put the cubes in a bowl and pour it with milk and a scalded egg. The mixture will still be sticky, but it will be possible to make two cones from the dough. But in our case we will make small balls. If you want to make shaping easier, you can loosely place a rolled dough on the fresh foil, wrap it in a 2 cm diameter roller and pull the roller through the strings at several places and ends to produce a small ball chain. Sprinkle the foil with a sharp fork and boil the boil in a strongly salted boiling water. For such small dumplings, it will take 8 minutes to boil. Do not forget to rotate in order to boil evenly. Put the finished dumplings out of the foil and serve them.

Prepare tomato sauce. Dissolve butter in the pot and bake the shallot in soft. Add tomato puree, a little water or broth, spices, lemon peel, (hoisin), salt, pepper, honey. Shortly cook.

A. Put the prepared rolls and peppers on a perforated pan (gastronade) and place steam in the steam oven at 95 ° C. At the same time, load the temperature probe and set the target temperature to 85 ° C.
B. Put the prepared rolls and peppers in a wide saucepan (tomato sauce) for tomato sauce, fold over the lid, and for medium performance, cook for approximately 20-30 minutes depending on the size of the rolls. You can also bake in the oven on the top and bottom heating program at 180 ° C approximately 20-30 depending on the size of the rollers.
(Probably you'll have Padron's peppers just because of a shape that could not be filled, and because they are just as stewed or grilled, you can put them in a pot / bake for stuffed peppers and rolls, or cut them or shred them separately.

6.

Now you can serve ready-made cabbage rolls filled with peppers, grilled peppers, avocado, small buns of dumplings, tomato sauce (be sure to remove the bay leaf). It will be great to add chilli sauce or even hoisin sauce.
