All the ingredients on the spreader mix and season with salt and pepper ..
1 large eggplant cut lengthwise to slices about 7 mm thin, squeeze on both sides and let 20 minutes drip. Then gently dry each slice with a napkin and slowly fry on both sides of the pan with olive oil or in the grill oven in gold (180 ° C).
Now you just have to cut the profiterol, grease the spreads, put a piece of aubergine and young salad (I bought a mix of young salads, but fine baby spinach, ..).
