This recipe comes from cakes in our region very traditional and the very first recipe I have from my great friend. It is a variation of fluffy dough with a minimum of fat and therefore all success depends largely on whipping and baking, which should be very short. Cake does not bake to the golden edges, but rather to pink or even light, the essential and conclusive indicator is that the dough is no longer raw.

Recipes always like to change and embrace various healthy or exceptional ingredients, such as chia seeds. If you occasionally prepare desserts or muffins with a crumb, try to replace some flour, which may be 100% wholemeal, with fine oatmeal or other flakes or, for example, almond flour. Almond flour is actually very finely ground almonds and you can also use almond chips without any problems. It fits perfectly with plums.

Preheat the oven to 160 ° C. Use the butter or fat in the spray to erase the largest baking sheet and sprinkle with a thick flour. Also prepare the fruit and the crumb. If the plum or apricot cake is enough, cut the fruit halfway and remove the pec. You may also need to use peaches, but I would have been looking for more marigolds. Put all of the ingredients on the crumb in a smaller bowl and mix everything thoroughly with your fingertips to create small lumps.

In the middle bowl, mix both types of flour together with baking powder, edible soda, chia seeds and a pinch of salt. If you sow this mixture, only the resulting dough structure will benefit because the flour will be aerated, so the resulting cake will be more fluffy. Using a mixer in the next container, thoroughly sieve the eggs together with the sugar. When you get a nice, fluffy, light foam, carefully mix the flour, milk, rum, and vegetable oil. Mix briefly and lightly.

Put the finished dough on the prepared sheet and spread evenly. Apply all the fruit to the surface of the whole surface and sprinkle it with a crumb. Place the plate in a warm oven and bake for about 15 minutes in pink. Because this dough contains only the minimum of fat, it is quickly dried, so bake only in pink so that the dough is no longer raw.
