I like to visit the Café Savoy, especially for the quality of the kitchen, the raw materials and the terribly nice staff. Of course even for a few favorite dishes / desserts, and that's where the recipe comes from. Salad with pepper dressing, which is simply specific and not irreplaceable. Café Savoy serves it with chicken thigh, but breast suprime from sous vide is an adequate substitute,). There are also tiny croutons on it, while I add a bit of the focus I just had on hand. They do it in a thermomix like me, but they do not let me into their kitchen, and I can only think that they do it the way.) The result is really almost identical, and I sincerely like it.

Perhaps sometimes I will learn the secrets of how they prepare it at Café Savoy.) Anyway, if you make this peppermint cream, which is very dirty because of its consistency, you will not be lost at home! It's great for everything! For sandwiches or just for a plate, for example, for grilled meat, for dipping pastries as a small appetizer, or for tasting everything possible, to a roastbeef. Try to take him in a nice glass with a spring stopper somewhere to visit and see how everyone licks up.
As always, I've written the procedure so that everyone can try the recipe, whether it owns a thermomix and a SousVide spa or does not have one at home.)

If you are preparing your breasts with sous vide. Heat the water bath at 55 ° C, chick breasts with a drop of olive oil and immerse in a warm bath for 1 hour.

Meanwhile, prepare dressing from the hoods. Place a spoon of olive oil, a teaspoon of salt, coarsely cut shallots and roughly cut capas, which you have removed from the kernel. Turn on the thermomix, set the temperature to the highest varomate level, mix to grade 5 and time to 15 minutes. After 10 minutes, start all the remaining olive oil in the container through the lid. A beautifully smooth, creamy cream is created to give you a glass and hold for several days.

You can simulate the preparation of the capillary dressing without a thermomixer by cutting a slice of shallot into a soft cloth, adding a spatula cut into smaller cubes and adding 1cl of water to the soft soap. The soft blended mixture is put into a powerful mixer such as a blender or kuter that can also melt the peppercorns, shuffle, add a portion of the oil, and start blending. After a while start to add the remaining oil and mix until you have a pretty smooth and slightly fluffy pepper cream.

Ready-made chicken breasts to remove from the SousVide bath, season and pepper according to taste and bend very quickly from both sides in the pan (they are heat-treated, just pulling on the pan). Or, if you follow the traditional method, take raw chicken breasts and trim them on both sides for moderate performance as you like them. Put them down, pepper and serve.

Put a little dresin, chicken breast, slices of salad, sliced or uncooked tomatoes, and a little bit of dressing on the top.
