Even though the season of asparagus is over, I have a recipe for another quiche for you. It is totally springy because you can find nettles in it, but it's more like an inspiration, it's up to you to use nettle, curd or spinach. I have to say that once in a while I can not resist and dinner is quiche with us, even in many ways.

You can buy a quiche dough in every supermarket, but it is easy to get home and you can prepare it from fresh wholemeal flour, even in organic quality. I have only two practical and key advice for you. If you leave the home dough, do not try to make it into it so that it still leaves cold lumps of butter, which can be a beautiful crunchy lump of the cabinet. It's the same as the sweet version of the fragile dough you can find on the blog. So I'll repeat for some :) A great helper is the "pastry blender" tool that lets you butter in the flour to cut into small pieces without warming it up and getting too loose. Also, make sure that the cabbage is pre-cooked, making the dough crisp. Dry beans, rice and / or straight ceramic beans are great for this purpose.)
