It is super healthy, tasty, and if you have a garden and a zucchini overproduction, you will also find it useful. In the original are walnuts, this time I used pecans with the addition of 2 spoons of sunflower, 1 tablespoon of thyme and 2 tablespoons of chia seeds ...
I love that coconut aroma in combination with citrus and spices! You can also play with the composition of nuts and seeds, it's a great way to incorporate more vitamin, omega fatty acids and energy into our diet ... The same goes for flour, I used a combination of spelled and rye but of course it is up to you and current kitchen supplies ...

2. Prepare the zucchini (cut and wrinkle excess liquid), grate the lemon peel (alternatively you can use the orange ...), grate the ginger, and cut the nuts.
3. Mix a large bowl of flour, baking powder, baking soda, salt, cinnamon and anise.
4. In the mixer, whisk fat (butter, coconut oil, or mix of both) until it is fluffy. Add both types of sugars and mix them. Stir the egg, one by one, until the previous one is nicely combined with the dough. Following is the vanilla extract.
5. Now you can mix zucchini, ginger, lemon peel, nuts and other seeds into the dough. When the mixture is well mixed, add the dry ingredients you have prepared at point 3, mix briefly and divide the material evenly into two forms. Sprinkle nuts and seeds.
6. Bake for 40-45 minutes, test the skewers. The result is very tender and full of flavor if you do not miss lemon peel, spices and vanilla.) Remember that even after taking out the oven, the bread is baked for a while. It's also good if you let it cool for 10 minutes in a form and then you put it on the grate, otherwise it would be too humid and sweaty, which is not the right way ...)
