Originally the recipe includes palm sugar , which you can easily replace with cane dark (this is one that contains more molasses, unless you come across a business trick when the sugar is called dark and it is beet sugar dyed ... I have happened to us But back ... canola sugars with higher content of molasses are, for example, muscovado, demerara, turbinado, ...).
In the recipe I also mention the root of galangal , which is similar to ginger, of a smaller character, but taste different. It is also often used in Thai cuisine, such as kha soup (coconut soup). If you do not get it, do not worry and just skip it. It will not be such a problem in Prague, but for those of you who can not even walk in Asian ingredients, visit the Sapa Market in Libus, where you can find everything. Sugar, soy sauce, put the water in the middle pot and heat slowly while stirring until the sugar dissolves. Add the remaining ingredients and cook slightly until the liquid is reduced to the consistency of thin syrup. After cooling, it gets a little thicker.
