I liked these potato omelettes very much in Andalusian tapas bars. I have beautiful memories for this holiday and not just gourmet.) We have to come back sometimes again ...
The weekend breakfast will be taken out of stereotype and served as an appetizer or monkey. They love the kids very much.
You can always play with them and add some cheese, vegetables or herb. I have served with ricotta this time because I like something fresh, but the traditional way of serving it is not.

1. In the central pan, warm about 4 tablespoons of olive oil, add the onion and slowly fry into the soft. Add potatoes, parsley, a pinch of salt and fry in the medium heat. After two minutes, pull the power down to a minimum, and for about 15 minutes allow the potatoes to slowly marinate and soak in the oil. It is important not to be fried but rather cooked and beautifully softened. Finally, toast parsley potatoes a little wrinkle with a fork and make sure they are really done inside.
2. In the middle bowl with a fork, spread the egg with another pinch of salt. Add nettle, chives and potato mix. If it is still hot, it does not matter at all, because the egg is a little crushed and we need it. If not, do not mind ..)
3. Reheat the pan again to moderate performance, lightly brush with oil and pour the whole mixture. Stir in the middle slightly. Once the eggs begin to behave like "mixed", stop stirring. We do this in order not to separate the egg part from the potato, so we need the egg to consolidate its structure and surround the potatoes with the parsley.
Using a flat blade, insert and adjust. Delete another 2 minutes, or as you like, someone prefer a more raw version. Turn around with your saucer and finish the frying tarts from the other tents. If you use a pancake like me to fry, rotation will go smoothly even without a saucer.
