This traditional recipe I once found in a Dutch cookbook and liked it very much. I have tried others, but I will always come back to this because it is really great and simple. Biscuits are just sweet, crispy and fragrant.
Using embossed rollers, you create beautiful patterns, but you do not have to worry about baking, even if you do not have these dough war or hidden ones like the beautiful traditional molding molds. I wish them very much because they are really beautiful. I've been looking for some skillful makers, but even though I've found, the molds are far from beautiful, artistic and precise shapes that you can find today just in the craft museum. Bake them even though they are only cut out or for example sprinkled with almonds.

I have one insight and, therefore, a tip for you, a great flour flour is used for the embossing of the embossed roller, as well as for spraying wooden molds. Also, if you want to push the dough into the mold, make it drier and therefore stiffer. On the contrary, it can be a bit more humid.
A mixture of spices, that's another topic! Already in the recipe for Christmas gingerbread here on the blog, which are truly unique, you can come up with the exact combination of spices you need to spell. For example, a coffee grinder can be used or I use a flour mill . I know it's a bit complicated, but what other than the correct, balanced and delicate spice mix would be these cookies or gingerbread. Believe me, it's worth the effort. If you do not have the time or the desire to undergo this procedure, of course you can use some of the spice blended in the worst. I still thought that if you were more interested, I could smash the mixture in more quantities and you could buy it through our store . Mix, or flour, salt and baking powder together with spices. In the second bowl, ideally mix the blender with lightly softened butter with sugar and two tablespoons of milk. Beat them until a well-sweetened light butter is produced. Now add a mixture of flour and fingertips to the smooth dough. If necessary, you can add a drop of milk to make it all together. As it is written in the introduction, if you dump the dough into traditional wooden molds, it should be stiffer and drier, but we need it a bit softer and more flexible on rolling and trimming. From the dough, create a plate, wrap it in the foil and leave it in the fridge at least until the next day, but a few days longer. Thanks to the relaxation, all the scents and flavors of the spice are splendid.

Preheat the oven to 175 ° C. Prepare the sheets that are laid out with baking paper or wiped with grease in the spray. Remove a portion of the dough from the fridge, lightly bend it and roll it on a flour of about 8 mm, place the last stroke with the embossed roller (lightly and evenly wrinkled), if you do not have it, apply another structured surface, such as a lace or a structured mat, dough with a smooth roller so that the final dough is approximately 4 mm thin. Of course, biscuits can be smooth or, for example, sprinkled with almonds. Cut the desired shapes, put on a rolled plate, in the oven and bake for about 8 minutes. After a short cooling, move them to the grid to completely cool down.
