When you have a taste, prepare a luxurious, festive and healthy dinner at home, try the pheasant breast. By the end of autumn, I finally found my favorite butcher on the farmers' markets, and so I started a lot of new experiments.
I have two versions for you. So you can choose from the mood, the opportunities and the desired atmosphere. Breast with delicate delicious white wine sauce, vanilla and pear, or more spicy and distinctive flavor with red wine sauce, chili and chocolate. Serve with your favorite attachment.

Vanilla - pear sauce
In a smaller pot of medium heat dissolve the spoonful of butter and cut on it a shallot cut into fine cubes. When it's soft, add the seeds of vanilla pod and one pear, which you have removed from the peel, the pudding, and chopped it into small cubes. Briefly season, add white wine and cream. Slowly cook until the sauce is reduced to 2/3 or the ideal consistency of the sauce. Using a mixer or stick mixer, mix the sauce into a delicate cream and dash to your taste. Remove the remaining pear, peeled and peeled, and slicing slowly on a spoonful of butter on the pan. Serve along with your breasts and sauce as an ornament.

Red wine sauce and chocolate
In the middle pot, slowly cook the wine together with the brew until the liquid is reduced to 1/3. Season the sauce according to taste, add a pinch of cayenne pepper and add some chocolate when it is slightly cooled. Slowly stir until the chocolate completely dissolves.

PREPARATION OF CHARGES
Preheat the oven to 180 ° C. On the large pan, warm the remaining two tablespoons of butter. Pile the pheasant breast, dry and spice with fresh thyme, pepper and salt. Rest on one side on medium heat to gold, about 5 minutes. Turn them and put them together with the pan in the oven for another 6-9 minutes, depending on the breast size. After removing it from the oven, leave it for a while to rest before serving with a sauce and a side dish. They will be softer and more juicy inside.
