Strawberry jam with chia seeds and vanilla

I think marmalade is something so familiar in our country that everybody has her memories of her early childhood and her idea of how she should look, smell and taste. My Moravian grandmother Jiřinka made great marmalades. Most of all marmalades I loved her cherry, but about that in another recipe. Strawberry marmalade made my grandmother perfect, and when I close my eyes, I still see the memories of the breakfast my grandmother was doing. I always had breakfast in the kitchen, everyone, except us two, was still asleep. I got a sweet lemon tea in a bulb mug and a saucer, just hot, which always tasted the same. To him I always got ready-made toasts with butter and marmalade on the plate.

I tried to find out how my grandmother cooked, and then I made the recipe still fine to be as healthy as possible. I used to sweeten honey as a variant of healthier sugars and added chia seeds . Those who know and already know know that they have hydrophilic properties and after a moment of contact with the fluid they are coated with such a fine gel and thus become smooth and unimaginable on the structure. Strawberry marmalade will blend in with strawberry seeds. It does not negatively affect the resultant marmalade in terms of structure or taste. Add vanilla pod, lemon juice and a pinch of salt to make the resulting marmalade more spicy and tastier. I like sweet marmalades to be a little sweet-sour and not just sweet-sweet :). A little butter is added to the end to make the jam clear of the foam and become clearer. You can omit any of these last additional ingredients and, according to the procedure, prepare a basic marmalade or just inspire and think of some other modifications. Even the amount of honey or sugar depends on your tastes and also on how mature and sweet the fruit you want to make the jam. I will look forward to your experiences and ideas. Put all strawberries cut into halves or even smaller pieces into a large (pot) pot along with honey, a whole lengthwise cut vanilla pod, lemon juice and salt. Start to warm up to moderate performance, stir well, and as soon as the mixture starts to bubbling, pull the power down and let it boil slowly with occasional stirring.

In the meantime, put a small saucer in the freezer, it will serve as a test aid for later.
This amount of strawberries should be slowly cooked for approximately 60 minutes to reduce enough excess fluid. After 60 minutes, add chia seeds and butter, stir, and allow a little while to bubble. Chia seeds swell. Butter added to clean marmalade so it does not have foam and was clear, but you can skip it.

To test whether marmalade has the correct consistency, you can put some marmalade on the chilled saucer. Marmalade should run very slowly and be the way you like it.) If it's too sparse, let it bubble gently and reduce it. If it is just right, you can fill it with sterilized jars and close them immediately. Do not worry about vanilla pod, just leave it in marmalade, it will be a nice surprise and proof that you have used genuine vanilla.)
