This year I drank a family recipe, which rightfully reaped all our ovations. My good grandmother Olinka controlled the Czech classic. Sunday duck hell with cabbage and dumplings. He also often made furry dumplings, Honza's buns, ... But her potato christmas was always the most, and it was mainly because of its qualities rather than perfect neatness. Smooth dough and a perfectly legible cop from this recipe do not wait, but everyone who bakes a bit and meets the dough dough and potato knows that potatoes add starch and hydration to the dough and so the resulting dough is always nice and definitely not dry . Our grandmother left us this year, so I would love to recite this recipe in her honor and my personal memory. And I believe you will love it in many families, and you will carry the torch, for example, as a Christmas of one of your grandmother Olinka, like the grandchildren of Grandma Jiřinky.

The dough for this Christmas is a bit tighter, so keep it and do not blow it, thanks to this structure, the result is beautifully fluffy and supple. Another important positive point is that it is awesome even days, not only when freshly baked. You surely know, many Christmas cakes are the second, or especially the third day, they're already dry. This is not really the case, and that's precisely what our family values most. Otherwise, it is, of course, decorated with vanilla, lemon peel, rum and even extra extras if you choose to add.
As you read in the ingredients, I added a handful of chopped linseed seeds to have some vitamins for more. Also, some of the raisins are replaced by cranberries because they are more acidic and we like them.)

First, cook the whole potato in the skin. Peel the skin, let it cool down and then grate it completely fine. Leave all the ingredients at room temperature. Gently warm the milk, it is enough above the temperature of the body, add sugar spoon, all yeast and stir the mixture well. Put it in a warm place and once it starts bubbling and showing signs of life, you can start preparing the dough.
Place flour, egg yolks, remaining sugar, 120 g of boiled grated potatoes, one lemon lemon peel, or extract, a pinch of salt and a sour clove. Instead, everything except butter, raisins, cranberries and almonds.) Start mixing and kneading at slow performance, as soon as the dough becomes more compact, add softened butter. Allow the robot to do the job for you, and develop a smooth, smooth dough that will not stick to the wall of the pot, stirring even the raisins and the larger part of the whole almonds. If I have time, I leave the raspberries and cranberries soaked overnight in rum. Cover the dough with a cloth or foil and let it warm in a warm place until it doubles its volume.

Now is the time to knit Christmas. Do not be afraid the dough is relatively sparse and do not pound it, it's okay. Specifically, this Christmas is only knit on two floors, that is, a knitted cop from 4 strands and then a 3-strand cop and it is precisely because the dough is thinner, making it beautifully breathed literally like a cloud. (Other types of Christmas Knit on three floors, that is, five-stranded cop, a three-piece cop and two of the two.) Prepare 7 equal sized pieces of dough and knit 4 strands on a prepared sheet (wiped or lined with baking paper). You can stretch it a bit from the center along its entire length to create a dent for the second blade that is better anchored. Finish the Christmas with the second spike of three springs. You can anoint it with the cream right now because it dries very quickly due to the dough structure and finally sprinkle it with almonds, some of which can be mixed.) Do not be afraid it will not be so nice or neat, it will smooth out slightly and it will be nicer but the biggest reward will surely be its amazing taste and texture.)

The Christmas cake is very fast and so preheat the oven to 200 ° C. Be careful not to prick it, because it would rather fall during the baking process and it ran wide than in height. Bake at 200 ° C for the first 8 minutes, then pull the power to 150 ° C and bake in gold for about 30 minutes.
