It's a French classic. The bath in perfume of fresh herbs and white wine steam has to suit everybody, but also many other modifications of the mussels French, Belgians, .. made up which are great, I personally love the cream or celery. How do you know fresh mussels? They should be closed, and if they open, when they come in contact with you, they react by closing, they just show life. After spraying, they must open, and those who stay closed do not eat. If you have already brought home and need to keep it, put it in the pot, moisten it with water, cover it with a wet cloth, and place it in the bottom of the fridge.

Clean the mussels and soak them in the water for 15 minutes to soak and flush.
Between this, in a big pot of oil, cut the shallot into the glass, add garlic, split tomatoes, thyme and bay leaves. After a minute (1 minute), pour this mixture over with wine and cook until it is reduced to half. Peel, pepper.
Sweeten the mussels, rinse briefly, because if they are alive, they open up during the baths so that sand or other unnecessary treasures can be released.
Add them to the pot under which you maximize the power and fold the lid. Boil vigorously and briefly until they open, about 5 minutes. Add butter, parsley, mix and serve.
Ideal with a piece of baguette that you can soak in a great mushroom broth. In Belgium, they make perfect French fries and, of course, a glass or a bottle of white wine.
