At the last minute, I have decided to put this recipe in my cookbook, and probably because tortillas are a terribly pleasant social affair that cems and heats not only at heart. Those who are bought are incomparable.
Their preparation is so simple. The fillings are colorful and tasteful. They give a great deal of fantasy. And all these features summarize and characterize what cooking means to me. And we agreed with the editorial that even here, in the August Bazaar, there should be something so summer and social.

1. In a bowl, mix 2/3 flour with salt, water and olive oil. Create a sparse smooth batter to work with. Using a kneader or a hand-cooked spoon, mix this dough for at least 10 minutes until it is beautifully smooth, supple and stretchy. Now you can add the remaining flour and continue stirring or dough to put on the swollen rabbit for a while. It is possible that you will not even use all the flour, it depends on its absorption, also if you decide to replace some or all of the flour with wholegrain. The finished dough should not be too stiff but must be beautifully smooth and flexible.
Divide it into 12-16 identical pieces and roll each on a slightly worn-out roll on a very thin plate.
2. On the stove, warm the pan at a moderate temperature and tortillates on both sides, briefly to the light of gold. If you have a grill on the grill, it is also very suitable. Make sure you turn around, you will know that the dough starts to inflate and make big bubbles. Do not drink them too long, they would be hard and not fill in different fillings.
3. If you do not need all the dough, tortilla can also be stewed but still a little shorter and freeze. When you want to use them, just take them out of the freezer, lightly boil them with water and gently fry on the grill or pan.
