Dal Makhani or Butter Lentil

My favorite Indian pulp dish, which is by name not too dietary, but very healthy and full of flavor. It contains a large amount of fiber, minerals, calcium, protein, plus folic acid and vitamin A, an important substance for healthy bones and cells.

Overnight we dip the lentils and beans in three times the amount of water with salt, ginger cut into thin wheels and chili if you like spicy foods.
The next day we cook until the legumes are cooked completely into the soft, you can use a pressure cooker, it should be a slurry, the water evaporates, sometimes it must be added.
In the second pot, let the butter slices slowly on the butter, add the garlic (chopped or chopped), and as soon as it begins to turn gold, add all the spices. After a few minutes, when the aroma should be released, it is only to add tomatoes to the cubes. It does not matter that it is softer, because once the tomatoes are disheveled, everything is mixed with a dip mixer.
Add ground spices, puree, legume mix, and cook for an additional 40 minutes with occasional stirring. (In India, this Dal is boiled for several hours, giving it its full and otherwise inimitable taste, so if you have time, give it time.)
Finally, mix the cream, heat briefly (resulting density should be as a slurry), sprinkle with fresh coriander and serve with Basmati rice or traditional Naan bread.

My Tips:
1.Garam masala is a mixture of spices: coriander, cinnamon, cumin, cloves, black pepper, cardamom, bay leaf, nutmeg. Available in some bio shops, for example from Sonnentor.

2. It's great food for kids too, just do not use chilli and add to the end of Cayenne pepper when I separate the part for small dinners.

3. If you are looking for a more dietetic version, you can replace the cream with yogurt and take off the butter.
